Preparation Steps
Step 1: Make the dough
Mix flour, salt, and sugar. Add egg if using, then oil and water gradually. Knead into a soft, pliable dough. It should be softer than chapati dough but not sticky.
Step 2: Rest the dough
Divide into 8-10 portions. Shape into balls and coat generously with oil. Let rest for at least 30 minutes, preferably 1-2 hours. This makes the dough more pliable.
Step 3: The stretching technique
On an oiled surface, take one ball and start stretching from center outward using your fingers. Stretch until you can almost see through the dough. This takes practice - don't worry if it tears initially.
Step 4: Create the layers
Brush the stretched dough with oil. Fold into a rectangle or spiral, then twist into a small ball again. This creates the layers. Rest for 10 more minutes.
Step 5: Final rolling
Gently roll out the twisted dough into a circle, about 6-7 inches in diameter. Don't press too hard - you want to preserve the layers you've created.
Step 6: Cook the parotta
Heat a tawa or heavy skillet. Place the parotta and cook for 2-3 minutes until golden spots appear. Flip and cook the other side. Brush with oil as needed.
Step 7: The final crush
While still hot, gently crush the parotta between your palms or with a spatula. This helps separate the layers and creates the characteristic flaky texture.
