Unniyappam: Kerala's Sweet Temple Offering
Small, round rice fritters sweetened with jaggery. A traditional offering made during festivals and special occasions.
Unniyappam are little spheres of joy. These sweet, rice-based fritters cooked in special pans (unniyappachatti) are temple offerings that have found their way into our hearts and festival tables. Each bite is dense, sweet, and comforting.
Ingredients
- 2 cups rice flour
- 1 cup jaggery, melted and strained
- 1 ripe banana, mashed
- 1/2 cup grated coconut
- 1/4 cup ghee
- 4-5 cardamom pods, crushed
- 1 tsp sesame seeds
- A pinch of salt
- Coconut oil for frying
- Water as needed
Preparation Steps
Step 1: Prepare jaggery syrup
Melt jaggery with minimal water and strain to remove impurities. The syrup should be of pouring consistency - not too thick or thin.
Step 2: Make the batter
Mix rice flour with mashed banana, grated coconut, ghee, and cardamom. Add jaggery syrup gradually while mixing to avoid lumps.
Step 3: Achieve right consistency
Add water if needed to make a thick, dropping batter. It should coat a spoon but drop off easily. Add sesame seeds and salt.
Step 4: Rest the batter
Let batter rest for 30 minutes. This allows the rice flour to absorb moisture and results in softer unniyappam.
Step 5: Heat the oil
Heat coconut oil in an unniyappachatti (special pan with round cavities) or regular deep pan. Oil should be medium hot - not smoking.
Step 6: Shape and fry
Drop spoonfuls of batter into hot oil, forming small round shapes. If using a regular pan, shape them manually to maintain roundness.
Step 7: Cook evenly
Fry on medium heat, turning occasionally for even browning. They should cook through completely - test one by breaking open to ensure no raw center.
Traditional Significance
Unniyappam are essential temple offerings during festivals. The round shape represents wholeness and prosperity, making them auspicious for celebrations.
Serving Suggestions
Best enjoyed fresh and warm, though they keep well for 2-3 days. Often served during teatime or as festival sweets.
