- 3 tbsp coconut oil
- 1 tsp mustard seeds
- 2 dry red chillies
- 1 sprig curry leaves
- Salt to taste
- 2 tbsp grated coconut for tempering
Preparation Steps
Step 1: Cook the cowpeas
Pressure cook soaked cowpeas until soft but not mushy. They should hold their shape while being completely tender.
Step 2: Prepare coconut paste
Grind grated coconut with cumin seeds and red chillies into a coarse paste. Add minimal water - the paste should be thick and flavorful.
Step 3: Cook pumpkin
Cook pumpkin cubes with turmeric, salt, and minimal water until tender. The pumpkin should be soft but not completely mushy.
Step 4: Combine ingredients
Add cooked cowpeas to the pumpkin. Mix the coconut paste with the vegetables and cook for 5-7 minutes until well combined.
Step 5: Prepare special tempering
Heat coconut oil in a small pan. Add mustard seeds, dry red chillies, and curry leaves. When they splutter, add grated coconut and fry until golden.
Step 6: Final assembly
Add the coconut tempering to the erissery. This gives a wonderful aroma and textural contrast with the soft coconut pieces adding crunch.
