Olan: Kerala's Gentle Coconut Embrace

Ash gourd and black-eyed peas in coconut milk. A mild, comforting dish that's a Sadhya essential and Vishu favorite.

Olan is Kerala cuisine at its gentlest. This mild curry of ash gourd and black-eyed peas in coconut milk represents the softer side of our food - no heavy spices, just pure, clean flavors that comfort the soul.

Ingredients

  • 2 cups ash gourd (pooshanikai), cut into strips
  • 1/2 cup black-eyed peas (vanpayar), soaked overnight
  • 2 cups thin coconut milk
  • 1/2 cup thick coconut milk
  • 2-3 green chillies, slit lengthwise
  • 2 tbsp coconut oil
  • 1 sprig curry leaves
  • Salt to taste

Preparation Steps

Step 1: Prepare the beans
Cook soaked black-eyed peas until tender but not mushy. They should hold their shape while being completely cooked through.

Step 2: Cut ash gourd properly
Remove skin and seeds from ash gourd. Cut into long, thin strips rather than cubes - this is traditional and allows better cooking.

Step 3: Start cooking
In a heavy-bottomed pan, combine ash gourd strips with thin coconut milk, green chillies, and salt. Begin cooking on medium heat.

Step 4: Add cooked beans
When ash gourd is half-cooked, add the cooked black-eyed peas. Continue cooking until ash gourd is tender but not mushy.

Step 5: Add richness
Add thick coconut milk and let it warm through without boiling vigorously. Vigorous boiling can curdle the coconut milk.

Step 6: Final tempering
Heat coconut oil in a small pan, add curry leaves, and pour over the olan. This adds final aroma and richness.
