Ingredients
- 750g chicken, cut into pieces
- 400ml thick coconut milk
- 200ml thin coconut milk
- 2 large potatoes, cubed
- 1 large onion, sliced
- 4 garlic cloves, minced
- 1-inch piece ginger, minced
- 3 green chillies, slit
- 2 bay leaves
- 4-5 cardamom pods
- 2 cloves
- 1-inch cinnamon stick
- 1 tsp black peppercorns
- 3 tbsp coconut oil
- 1 sprig curry leaves
- Salt to taste
Preparation Steps
Step 1: Prepare the chicken
Clean chicken pieces and marinate with salt and a little turmeric. Let it rest for 15 minutes. This basic marination helps the chicken absorb flavors better.
Step 2: Heat whole spices
In a heavy-bottomed pot, heat coconut oil. Add bay leaves, cardamom, cloves, cinnamon, and peppercorns. Let them release their aroma - this forms the fragrant base.
Step 3: Sauté aromatics
Add sliced onions to the spiced oil. Cook until translucent and soft. Add ginger-garlic paste and green chillies. Cook until fragrant.
Step 4: Cook the chicken
Add chicken pieces and sauté until they change color on all sides. This initial searing locks in juices and adds flavor to the final dish.
Step 5: Add vegetables
Add cubed potatoes and mix well. Cook for 3-4 minutes until potatoes start to soften slightly around the edges.
Step 6: Add thin coconut milk
Pour in thin coconut milk and bring to a gentle boil. Cover and simmer until chicken and potatoes are cooked through, about 15-20 minutes.
Step 7: Final enrichment
Add thick coconut milk and curry leaves. Simmer for 3-4 minutes without boiling vigorously - vigorous boiling can curdle the coconut milk. Adjust salt.
