Ingredients

  • 2 large onions, chopped
  • 3 tomatoes, chopped

  • 3 green chillies, chopped

  • 1 sprig curry leaves
  • 1 tsp mustard seeds
  • 2 tsp coriander powder
  • 1 tsp turmeric powder
  • 2 tsp chili powder
  • 1 tsp garam masala powder
  • Salt to taste
  • 1/4 cup water
  • Coriander leaves for garnish

Preparation Steps

Step 1: Prepare the eggs
Hard boil the eggs, cool in cold water, and peel. Make shallow cuts around each egg - this helps the masala penetrate and adds visual appeal.

Step 2: Start the tempering
Heat coconut oil in a heavy-bottomed pan. Add mustard seeds and curry leaves. When they splutter, the base is ready for building flavors.

Step 3: Build the base
Add chopped onions and sauté until golden brown and caramelized. This caramelization is crucial for the depth of flavor in the final dish.

Step 4: Add aromatics
Add ginger-garlic paste and green chillies. Cook until the raw smell disappears and the mixture becomes fragrant.

Add all the spice powders - coriander, turmeric, chili, and garam masala. Cook for 30 seconds to toast the spices and release their oils.

Step 6: Add tomatoes
Add chopped tomatoes and cook until they break down completely and form a thick, saucy base. The tomatoes should lose their shape entirely.

Step 7: Combine and simmer
Gently add the prepared eggs to the masala. Add water and simmer for 8-10 minutes, allowing the eggs to absorb the flavors. Garnish with coriander leaves.
